Gluten Free Granola

This granola recipe might save your sanity! It is perfect for a quick breakfast, a snack on the go and will even satisfy a sweet craving. Make a big batch once a week and keep in your pantry. Older kids can even make their own breakfast by pouring plant based milk over the healthy granola. You don’t even have to get up! The best part about this granola is sweetened with dates only. No preservatives, no added unnecessary sugar, no highly processed ingredients and no oil. All natural and healthy granola recipe that’s gluten free, oil free and delicious.
Ingredients:
2 ¼ cups oatmeal
2 ¼ cups almonds
¾ cups water
1 cup dates
¾ cup raisins (optional)
Directions:
Preheat the oven to 350ºF (175ºC).
Put water and dates in a pot and bring to a boil.
Once boiling, immediately remove from the stove and cover with a lid. Let it stand for 5 minutes.
Meanwhile add oatmeal and almonds in a food processor and blend until you have a coarse meal. Transfer into a bowl.
Now add the water and dates into the food processor and blend until smooth.
Add the oatmeal and almond mixture back to the food processor and pulse a few times, just until combined.
Pour on a baking sheet lined with parchment paper. Use your hands to create granola-like clusters.
Bake for 15 - 20 minutes until crunchy, turning granola in between to avoid burning.
Let it sit on the counter until completely dry and cool.
Optional: Add raisins.
Store in a breathable container to maintain air flow and to avoid moisture getting trapped.
Notes:
Serve with plant based milk or yoghurt. Top with fresh fruit.
